When a member of the family gets sick and has no appetite or cannot eat solid food, mother makes lugao (rice gruel in English, congee in Chinese), plain or with chicken. Sometimes it is made with goto, which is sold in supermarkets as tripe, blauched and tenderized.
Chicken Arroz Caldo
2 tablespoons cooking oil or lard
2 cloves of garlic, minced
1 inch piece of ginger root, pared and cut into strips
1/2 onion, chopped
1 chicken, cut up
1 cup enriched rice
5 tablespoons patis or to taste
10 cups water
Chopped green onion for garnish Fried minced garlic, for garnish
Saute garlic, onion and ginger root in cooking oil or lard in a big pot. When browned, add the chicken pieces and the rice. Flavor with patis. Cook covered for a few minu-tes. Add the water, stirring all ingre-dients together to avoid sticking to the bottom of pot. Bring water to boil, then reduce heat and simmer until rice and chicken are tender. If you can buy kasubha in a Filipino store, add a tablespoon to the lugao to give it a nice reddish colour.
Serve in bowls, sprinkling top of each with fried garlic or chopped green onion. Serve with patis with lime juice.SHARE With Your Friends:
