Artichokes Ala Romana

Serves 6


6 med. fresh artichokes
18 pcs. sun dried tomatoes
18 whole peeled garlic cloves
1 bunch fresh sage, chopped
1 Tbl. fresh thyme
1 Tbl. fresh oregano
Pinch of red pepper
1/4 C. extra virgin olive oil
1 C. dry white wine
Salt & pepper to taste


Pre-heat oven to 350 degrees. Trim tops and peel off dark green outer leaves from artichokes. Peel stem of artichoke and scoop out center thorny choke.

Stuff artichokes with dried tomatoes, garlic & fresh sage. Place in shallow glass baking dish. Sprinkle with herbs, salt, peppers, olive oil& wine. Cover baking dish with foil and bake for 45 minutes. Spoon drippings over artichokes before serving.
