Hannah’s Malva

Ingredients:

Batter:

1 tsp. baking soda

1/2 cup milk

1-1/2 cups self-rising flour

1 cup sugar

2 eggs

3 Tbs. apricot jam, softened with a fork

3 Tbs. butter, melted

Topping:

1/2 cup water

1/2 cup cream

1/2 cup butter

3/4 cup sugar

Directions:

Dissolve soda in milk. Sift flour and sugar. Add milk mixture, eggs, jam and butter and mix all ingredients until blended. Put into an oval pan and bake 35 minutes at 350 degrees. Remove from oven and prick with a toothpick so cake can absorb topping, which should be put on while cake is still hot.

Meanwhile, boil together topping ingredients. Stir constantly and be careful not to scorch. Use a spoon to flow it all over the cake.
