3 to 4 pound pork shoulder or belly, with skin
3 cups water
1/2 cup soy sauce
1/4 cup lemon juice
4 thin round slices ginger root, chopped
4-6 stems green onions, chopped
1 tablespoon sugar
Buy the pork in a Chinese food store where pork is sold with skin on (the skin is important) and in one whole piece.
Place in a big pot or wok, skin side down. Cover with the 3 cups of water and add the soy sauce, lemon juice, ginger root green onions and sugar. Bring water to boil, over high heat, boil for some 10 minutes, then lower heat, cover the pot or pan and simmer until the skin is very tender. Turn the slab of pork and simmer, until meat is tender. Add one cup of water when needed.
Taste liquid in pot or pan- it should be sweet – adding sugar to suit taste. The sauce should be thick.
To serve, slice meat thinly across the grain, making sure each slice has skin. Arrange slices, overlapping, in platter and brizzle with sauce.
