Malagasy Lasary Voatabia

Lasary (recipe follows) is a specialty of the highlands of Madagascar, where it is enjoyed as a side dish or maybe as a topping on a baguette sandwich. Tomatoes and green onions join forces in this fresh, simple, tasty salad.

If this recipe seems easy, it is. A more complicated version was found on Youtube; the entire video detailing its preparation was over half a minute long:

Lasary recipe in video

— 2 tomatoes,
— 1 green (spring) onion,
— 1/8 tsp salt or more to taste,
— 1/4 tsp lime juice,
— 1/4 tsp grated fresh ginger,
— 1 tsp water.

Finely dice the tomatoes and onion and mix all ingredients in a bowl. Allow to macerate at least two hours before serving cold as a condiment with main dishes.

As an elegant side dish, lasary was a welcome addition to our Malagasy cuisine in recipe.
