Syrian Kes Ka Soon


Serves 6


1 onion, medium, chopped

1/4 cup oil

12 oz. tiny soup pasta, preferable acini pepe

3-1/2 cups water

salt to taste

12 oz. chickpeas, drained

6 oz. margarine

8 oz. mild cheese, sliced or grated (optional)


Sauté onion in oil until tender on medium flame. Add acini pepe pasta and continue sautéing until noodles turn a light brown color, stirring constantly. Add water, salt and chickpeas. Bring to a boil and lower heat. Cover and cook for about 25 minutes. When water is absorbed, add margarine and mix gently.

For a dairy dish, place the cooked Kes Ka Soon in a baking dish and spread cheese over all. Bake in 350-degree oven for about 15 minutes. SHARE With Your Friends:
