Fresh lime juice plus the addition of tequila take guacamole to new heights.
Makes 2 1/2 cups (10 servings)
2 large ripe avocados, peeled and pitted
3 Tbsp lime juice
1 1/2 tsp. minced garlic
1-2 tsp Spice islands crushed red pepper
1 tsp. Spice islands ground cumin seed
1/2 tsp. salt
1/2 cup diced tomato
1 Tbsp. tequila (do not omit)
In medium bowl, mash avocado to make 2 cups. Stir in remaining ingredients. Let stand 15 minutes, or longer, to blend flavors
Serving suggestion: Use as a dip with chips or vegetables, spoon into the center of a chef’s salad, dollop onto bean soups, or stews, or accompany grilled chicken.
Ripeness test: Avocados are ripe if they give to gentle pressure when held in the palm of the hand. When ripe, a wooden pick may be easily pushed into the stem end.
Hints: Guacamole may be prepared several hours ahead. Cover with plastic wrap pressed against the surface of the dip. Store in the refrigerator.
