Grilled Tomato Salsa


2 T. balsamic vinegar
2 T. olive oil
4 tomatoes (Romas, cored and sliced into 1/2″ thick pieces)
1/4 red onion
1 green chile pepper
salt and pepper to taste



In a medium bowl place the balsamic vinegar and olive oil, and whisk them together.
Add the tomatoes, red onion, and green chile peppers. toss the vegetables so that they are well coated, and then let them sit for 30 minutes.
Remove the vegetables and then grill them for 30 to 60 seconds on each side, or until they are somewhat charred and heated through.
Dice the grilled vegetables and place them in the bowl with the vinegar and oil. Add salt and pepper. SHARE With Your Friends:
