Serves 4



6 Med. baking potatoes, peeled
2 C. flour
1/2 tsp. grated nutmeg
1 Egg
2 Tbl. Ricotta cheese
1 tsp. salt
1/4 tsp. white pepper


Peel potatoes & boil until soft, approx. 15 min. Drain well, cool &process potatoes through a ricer, or mash well, eliminating all lumps. Put potato mixture into a large stainless bowl. Add flour, nutmeg, salt &pepper. Cut in egg & mix well until dough forms. Add cheese & continue to knead until dough is mixed well & firm (total kneading time about 15 min.). Dough should spring back when poked with finger. Cover & let rest 5 min. before shaping gnocchi. On a well floured surface, roll small amount of dough into snake-like shape about the thick-ness of your finger.Cut into 1″ pieces. Roll each piece off the back side of a fork to create small ridges. Place pieces into floured dish and lightly cover with flour to prevent sticking.

Place desired amount of Gnocchi into rapidly boiling, salted water. Boiluntil Gnocchi floats to top of pot. Drain well & serve with your favorite sauce. SHARE With Your Friends:
