Nutty Pumpkin or Squash Pancakes


2 1/2 cups sifted flour
2 teas. baking powder
1/2 teas. salt
1 Tblsp.
1 teas. cinnamon
1/2 teas. nutmeg
1 teas. baking powder
3 egg whites stiffly beaten
3 egg yolks beaten
add 1 3/4 cup sour milk
add 1/2 cup oil
add 3/4 cup pumpkin or squash (mashed)
1 cup nuts (pecan or other)
vanilla (optional)



Sift together dry ingredients, add egg yolk mixture and mix. Fold in egg whites and nuts.
