Materials That You Need to make Hazelnut Latte Birthday Cake
For prepare cakes
- 100g unsalted butter, plus extra for greasing
- 100g bag chopped toasted hazelnuts
- 300g light brown soft sugar
- 6 tbsp semi-skimmed milk
- 1 tsp fine instant coffee powder (see tip)
- 6 large eggs, at room temperature
- 2 tbsp cornflour
- 175g plain flour
For the coffee syrup
- 50g light brown soft sugar
- 1 tsp fine instant coffee powder
- 1 tbsp Frangelico (hazelnut) liqueur, or use Kahlua or Tia Maria
For preparing frosting and nuts
- 400g mascarpone
- 300g hazelnut chocolate spread (Nutella has the best texture for this)
- 1 tbsp fine instant coffee powder
- 50g chopped toasted hazelnuts
For preparing latte topping
- 150ml pot double cream
- 4 tsp icing sugar
- 3 tbsp semi-skimmed milk
- 1 tbsp fine instant coffee powder, dissolved in 1 tsp boiling water
Preparation of Hazelnut Latte Birthday Cake
Heat the oven to 180C. Take two 20 inch sandwich tins and grease the bottom of them to prevent sticking or put baking parchment. Take hazelnuts into the food processor with 2 tbsp sugar, run the processor and wait until finely chopped.
Take butter, milk and coffee powder into a pan heat all of them until butter has melted. Then take mixture from the oven.
Now, continue with sponge cake. Crack the eggs and add sugar mix them with mixer for 5-10 minutes until the mixture gets thick consistency.
Take cornflour, plain flour and 1/2 tsp salt and mix. Then add this mixture into whisked mixture. Sprinkle ground nuts and fold them too carefully. Pour warm milk and fold this in. Take this batter and divide equally to sandwich tins and bake for 25 minutes. After cooking loosen the sides and let them cool.
Take sugar and 4 tbsp water into a pan and boil this mixture, after boiling leave 1 minute and take from the heat. Add coffee and alcohol, stir well. Beat the mascarpone, hazelnut chocolate spread and coffee together in it.
Take the cakes and cut horizontally. Dampen surface of cakes with syrup. Take first cake as base and pour frosting on it, spread properly. Then repeat same process next two layers. When you come last floor pour the remained frosting on the cake and cover all over the cake with it.
Take 3 tbsp of the cream, 1 tsp icing sugar and 1 tbsp milk into a small bowl. Take the rest of the cream, milk and sugar, plus most of the dissolved coffee and put into a larger bowl. First whip the white cream, then the coffee cream until . Pour the coffee cream onto the cake surface and cover the top with this mixture. Whisk a little more coffee that remains, so that will give darker look.
