Materials for forest fruit birthday cake :


For cream;

  • 60 g starch
  • 1 cup frozen mixed berries
  • 80 g sugar
  • 70 g coconut oil – You can us palm oil, or butter or margarine as alternatives
  • 1 package of whipped cream
  • 500 ml milk
  • 1 tablespoon sugar

For the sponge cake;

  • 75 g flour
  • 78 g sugar
  • 2 eggs
  • 1 full teaspoon baking powder
  • 2 tablespoons cold water

For the decoration;

  • Broken almond
  • 100 g dairy cream
  • 125 g of white chocolate

To between the sponges;

  • 3-4 tablespoons of red fruit jam
  • 1 handful of berries

Preparation for Forest Fruit Birthday Cake :

Let’s begin with sponge cake.Take egg white and stirring until it becomes tough with cold water. Then take another bowl and add egg yolks and sugar, stir this mixture until it look like a white cream. Add the egg white mixture that you prepare first in it. Then add sifted flour and baking powder and slowly mix. Take this dough and pour it into cake mold. Cook in prehated 170 degrees oven. Now, it is time to prepare cream. Add cream, milk and sugar into a pot and cook them until it has thick consistency. Take the mixture from stove and add oil and vanilla in it. Add the pureed berries and start whisking . Finally add powdered whipped cream and continue whisking. Divide sponge cake in the middle. The one of them as base and wipe jam on it. Add the half of cream on the jam and place fruits.
