Banoffee Marshmallow Cake

Very easy and quick birthday cake.

— 325g self-raising flour.
— 165g butter, plus extra for greasing.
— 165g soft light brown or light brown muscovado sugar.
— 4 large eggs.
— 4 tbsp milk.
— 2 large ripe bananas.
— 1 rounded tsp baking powder.
— 1 rounded tsp ground cinnamon.


Ingredients for the filling:
— 300ml pot double cream.
— 450g jar dulce de leche.
— 1 banana.
— 50g marshmallows, chopped, plus extra whole ones to decorate.

Banoffee Marshmallow Cake Recipe:

1) Preheat oven to 190 ° C / 170 ° fan / Gas 5. Grease the bottom and round 21cm free baking. With a wooden spoon or electric mixer, beat the butter and sugar together until smooth cream and pale. In another bowl, sift together the flour, baking powder and cinnamon. One by one, each beaten egg into the butter mixture along with tbsp dry mixture and then beat in the milk and stir in remaining dry ingredients until well blended.

2) In a bowl, combine flour, which contains the mash bananas until smooth and lump free – Whistle with an electric mixer if necessary – then fold in the remaining portion of the mixture until well blended. Spoon into the tin and smooth the surface. Bake for 45 to 50 minutes, until a skewer inserted in the center comes out clean. Allow to cool for 5 minutes, then remove the tin and continue cooling rack.

3) Use a serrated knife, cut the cake horizontally into 3 equal layers. Beat the cream to form stiff peaks, then cut a banana into small pieces and add the cream, along with marshmallows. On the first layer, spread a generous coating Dulche de leche and then half the cream mixture. Sandwich of the second layer and repeat. Thickly spread Dulche de leche on top of the cake, then arrange extra marshmallows and edges.
