Portuguese Red Bean Soup

Ingredients for Portuguese Red Bean Soup:

  • 16 oz dried kidney beans
  • 1 ham bone
  • 1 Portuguese sausage (chourico)
  • 2 onions, chopped
  • 2 sprigs thyme
  • 24 cups water (approximately)
  • 4 potatoes, diced
  • 3 carrots, sliced
  • 1 tbsp salt
  • 2 tsp pepper
  • 1 (8 ounce) can tomato sauce

Instructions for Portuguese Red Bean Soup:

Soak beans overnight. Simmer beans in water for about an hour. Add salt and pepper, ham bone, sausage, tomato sauce, thyme, onions, potatoes, and carrots. Bring to a boil then simmer for about two hours.
