Mishti Doi (Sweet Yogurt)
Mishti doi is different from the blueberry, strawberry or any other fruit flavored yogurts kids eat now. It is ready in about two hours. If you are expecting guests and have to a whip up a meal in a short time, mishti doi is an easy dessert to make for the finale. It is very good for any festive occasion. Here is the recipe for mishti doi.
— Evaporated milk 350 ml
— Plain Yogurt 250 gm
— Sour cream 100 gm
— Sugar 1/3 cup
— Yellow food color A few drops
I have made mishti doi a couple of times by simply using condensed milk (Milk Maid Brand) and plain white yoghurt in the same proportion. Note that condensed milk is already sweet, so you do not need to add any more sugar. To get the characteristic red colour (at least the way it is made in Calcutta), I used “caramelised sugar”, which is basically sugar burnt to a red colour.
I blended everything together, using a mixer, and set the whole thing in the oven. I am not sure what the sour cream is for, and surely they don’t use it back home?
Beat the plain yogurt using an electric beater (a whisk is also fine). Now open the can of condensed milk and pour it on the plain yogurt. Beat it in. Now open the can of evaporated milk and mix in the contents. Mix it into the yogurt, condensed milk mixture. Preheat the oven to 300 degrees F. Keep the bowl of yogurt in the 300 degrees oven for 15 mins. Next lower the oven temp to 200 degrees F. Let the bowl remain in the oven for 1.5 hrs until the curd is set and not wobbly. Chill in the refrigerator before serving.
