- 1 cup water
- 1/3 cup sugar
- 1/2 cup snipped fresh mint leaves
- 1/2 teaspoon finely shredded orange peel
- 1/2 teaspoon finely shredded lemon peel
- 1 cup orange juice
- 1/3 cup lemon juice
- Mint sprigs, optional
Step 1:In a small saucepan combine water and sugar. Bring to boiling, stirring till sugar dissolves.
Step 2:Remove from heat and pour over mint leaves.
Step 3:Stir in peels, orange juice and lemon juice. Cover and let stand at room temperature at least 1 hour.
Step 4:Strain juice mixture, then cover and chill.
Step 5:Serve over ice. Garnish with mint sprig, if desired. Makes four 4 oz. servings. (Recipe can easily be doubled or tripled for a crowd.)
